Cooking Greek horta has its tricks! How to clean the greens, for one. To cover or not to cover? Bitter or sweet greens? Lemon or Vinegar as a dressing? To drink or not to drink (the cooking liquid)? Horta (pl.) are among the healthiest foods in the Greek diet. They’re packed with nutrients, antioxidants, important vitamins and minerals, and almost no calories. Consuming them frequently is one of the longevity habits of my fellow islanders on Ikaria. There are hundreds of different edible wild greens and herbs in Greece. At the farmers’ markets in Athens, you can find many varieties of both wild and cultivated greens. So how to cook your greens? Here are some tips for Perfect Flavor & Texture❗️ 1️⃣ TRADITIONAL GREEK METHOD: BOILING 👉 How: Boil greens in lightly salted water for 25 or so minutes. 👉 Result: Soft, tender greens with rich flavor. 👉 Serving Tip: Drain, drizzle with olive oil & fresh lemon juice or vinegar (lemon for sweet greens, vinegar for bitter). 2️⃣ COVER OR UNCOVER THE POT? 👉 Covered Pot: Faster cooking & nutrient retention but dulls color. 👉 Uncovered Pot: Retains color, but some nutrients may be lost. 👉 Greek Trick: Half-covered lid for balanced color & nutrition.
